Description

A deep ruby color introduces 'Princesses', revealing an intricate blend of red and dark fruits, subtle herbs, and spices. Ripe berries, blackcurrant, cherry, and a hint of licorice adorn the palate, with velvety tannins providing a smooth texture. The finish balances oak and fruit complexities.

'Princesses' originates from 30-year-old organic vines in IGP Pays Herault, benefiting from limestone, clay, and pebble soil. A blend of 55% Syrah, 35% Cabernet Sauvignon, and 10% Grenache undergoes meticulous sorting, destemming, and 20-25 days of maceration. Aging for 14 months in 300L oak barrels with vegan fining.

Pair 'Princesses' with grilled lamb, herb-roasted beef, or vegetable-based dishes like ratatouille and roasted mushroom risotto. Its intricate flavours also complement aged cheeses, making it an exquisite addition to various dining occasions, showcasing its sophisticated and delightful character.

Domaine Parpalhol is before anything a story of 2 friends focused on a common passion for authentic wines and symbols of Languedoc treasures. First, there is Julien. Following a winemaking scholarship in Montpellier, he takes over the family estate in 2006. He follows his father’s footstep, a local man who used to sell to the village cooperative. Julien learned with Jean Michel Alquier but also at Domaine Trevallon, a star from Provence. Serge comes from the restaurant business. After 20 years abroad, his passion for wine comes true through several studies such as Wine University in Suze la Rousse in France, the famous Swiss Changins wine school and at last the WSET in 2015.

The Parpalhól Estate covers near 30 hectares, surrounding Béziers and Corneilhan. An exceptional landscape already planted by Romans centuries ago. Selecting the best grapes varieties Languedoc can offer, Syrah, Grenache, Mourvèdre for their red wines, Cabernet Sauvignon, Chardonnay, Marsanne, Viognier, Sauvignon et Colombard for the white Parenthèse.

Convinced by the necessity and value of their environment, Parpalhól choose organic viticulture and are Ecocert Certified since 2015. As we are aware that every little details counts, this is why vines are grown in Cordon de Royat style, with grass cover every second row in order to preserve biodiversity in the soil. Harvests takes place early mornings in order to pick up grapes the coolest as possible and we make sure teams get freshly brewed morning coffee! Grapes are then stored in cold rooms before going to pneumatic press.
